60ml Hatters Smoked Orange Gin
10ml dry vermouth
1 dash orange bitters
Cubed ice
Stir the gin, vermouth and bitters with ice for 20 seconds until icy cold and properly diluted. Strain into a chilled coupe. Express an orange twist over the surface, then discard it—or leave it in if you like the theatre.
A northern answer to the Hugo: bright, floral and berry-led, with enough bite to keep it out of the picnic basket.
40ml Hatters Raspberry Gin
15ml elderflower cordial
75ml dry sparkling wine
50ml soda water
Mint leaves and cubed ice
Clap the mint once between your palms and drop it into a wine glass with ice. Add raspberry gin and elderflower, then pour in the sparkling wine. Finish with soda and give it one slow lift with a bar spoon—don’t beat the bubbles out of it.
