We take the unapologetically juniper-rich Hatters London Dry base and steep it with around 20 real raspberries per bottle for a week. Nothing artificial: its vivid blush, ripe fruit and soft sweetness come entirely from the raspberries.
Nose: Fresh crushed raspberry leads, with bright berry jam, citrus lift and the familiar piney backbone of Hatters gin.
Palate: Juicy raspberry opens first, then coriander, cardamom and deep juniper bring the dry, fragrant structure. Rounded and generous without losing its gin credentials.
Finish: Clean and lightly tart, with lingering raspberry and a slow return of juniper.
Serve: Pour over ice with a premium Indian tonic, a wedge of orange and a handful of fresh raspberries. For a drier serve, use soda with a strip of orange peel.

150ml premium Indian tonic
Plenty of ice
Drop the raspberries into a chilled highball and press them once—just enough to wake them up. Add the gin and ice, then squeeze the orange wedge over the top. Pour the tonic slowly down a spoon and lift once from the bottom.
