It began with a refusal to make a quiet gin.
Hatters started with one stubborn belief: gin should taste like gin. Not like a polite afterthought. The first after-hours experiments were all about finding a clean base, then pushing botanicals until the juniper had something real to say.
Those early bottles found their way to friends and family. The response was simple: make more. So we did.
